In a food processor or blender, process the tofu until creamy. Then add the butter and vanilla extract and blend until creamy. Add the sugar and pulse until mixed well. dough into two logs about 10 inches long and 2 to 3 inches wide. Place on a lightly greased baking sheet and bake for 30 minutes, until firm to the touch. Remove from the oven and place on a wire rack; let cool for 15 minutes. Reduce the oven temperature to 300 degrees F. Transfer the log to a cutting board and, using a serrated knife, cut the log into slices about 1/2 inch thick on the diagonal. Arrange evenly on baking sheet. Bake for 10 minutes; turn over and bake for an additional 10
